Josh and Paige Kaner ditched their corporate jobs and drove to Texas with one idea: make the best Neapolitan pizza outside of Naples. They found a barn-red building on Highway 290, just where Austin turns into Dripping Springs, and got to work.

The old smoker left behind by the previous tenant became an obsession. Josh brined, smoked, and perfected until his pastrami rivaled anything in New York. Now Pieous is one of the only restaurants in Texas with AVPN certification, and the pastrami is the thing people drive 45 minutes for.
